What is a Scoville Heat Unit, or HPLC Test?

The Scoville Organoleptic Test is a refined, systematic approach. With this method, human subjects taste a chile sample and record its heat level. Samples are then diluted until heat can no longer be detected by the taster, this dilution is called the Scoville Heat Unit, named for the man who invented it, Wilbur Scoville. A More technologically advanced test is the HPLC test, or High Performance Liquid Chromatography. An HPLC "sees" the heat compounds and records the amount in parts per million (ppm). A quick conversion from HPLC to Scoville is to multiply the ppm by 15 to get the Scoville Heat Unit.

Pepper Facts - What we’ve heard

• There is a legend that the Incas created a wall of smoke between themselves and the conquering Spaniards by burning hot peppers.  These fumes contained natural irritants that temporarily blinded their invaders.  www.chilepepper.com

• Wear rubber or plastic gloves over your hands when handling hot peppers.  Do not touch your face, eyes or any other “vital body parts” while working with hot peppers.

• If you bite into a pepper that is too hot, never try to put the Fire out with water.  Try milk, bread, or a teaspoon of sugar.  Bread actually works as a sponge and absorbs the heat that’s floating around in your saliva.

• Hot peppers are high in vitamins C and E and contain folate and calcium.  The Alzheimer’s Assoc. recommends taking care of your brain by feeding it nutrients found in foods high in vitamins E and C; taking multi-vitamins containing folic acid; and managing blood pressure, cholesterol, blood sugar and body weight.  www.chileppper.com  

• Chiles have little to no fat, cholesterol, sodium, carbohydrates or sugar.

• If you have a sore throat, take a teaspoon of Hot Sauce.  It relieves the pain.

• Capsaicin extract is being used in clinical research as a natural pain reliever.  Various studies have shown that when capsaicin is applied to a spot on the body, it depletes a neurotransmitter called "substance P," which relays pain signals from an injured site to the brain. Additionally, capsaicin increases DNA synthesis and the production of collagenase and prostaglandin, which can reduce both pain and inflammation.

• A folk remedy for relieving toothache requires soaking a piece of cotton in tincture of cayenne and placing it inside the tooth cavity. More recently, capsaicin-based creams are seeing great success in helping to combat pain. www.fiery-foods.com

• Capsaicin has a well-documented history as an animal deterrent. Chile powder is added to bird seed to prevent squirrels from eating it; there is no effect on birds and the vitamin A in the powder brightens the birds’ plumage.

Manny Meets the Legendary Wings Man!

Buffalo wings were born in 1964 at the Anchor Bar, a restaurant in Buffalo, NY, where proprietor Teressa Bellissimo needed to make a late-night snack for her son and his friends.  As the story goes, she combined chicken wings and hot sauce, blue cheese dressing and celery sticks, and a legend was born.

How do you get the burning sensation to stop after consuming chile peppers?
The best way to ease the burning sensation is to drink milk, eat yogurt or any dairy product. Milk Chocolate is great. A substance found in dairy products known as caisen, helps to disrupt the reaction. This substance which is a lipophyllic phosphoprotein, acts like a detergent and literally strips capsaicin from its receptor binder site. If you get the oil on your skin you may want to rub it with rubbing alcohol first then soak in milk, this seems to alleviate the burning. If you get it in your eyes the only thing you can do is repeatedly rinse with water or saline. Be very careful when handling hot chiles, especially species like chinense - where the habanero comes from, there are reports of these chiles actually blistering the skin. Gloves are recommended when handling or peeling any types of hot chile.

Shipping hot sauce is tricky because it has two strikes against it. First, it's heavy. The bottles are made of glass, and contain dense liquid. Second, it's fragile. In order to get the merchandise to you, unbroken, we carefully wrap each bottle. Your shipping charge includes the exact UPS rate, plus a nominal handling fee.
